We want to know if you are allergic to anything and if you have medical conditions. Please let us know if anyone in the group is lactose intolerant, vegetarian, vegan, etc.
Coffee, Tea in AM

Coffee and tea is generally available around 7:00 AM, juice is always in the cockpit fridge
Breakfast
Belgian Waffles with fresh berries on the side, whipped cream and syrup Bagels with Cream Cheese and assorted jams Eggs Benedict with Hash Browns Breakfast Burrito's: Eggs, Mushrooms, Sausage or Bacon rolled up in a burrito Ham and Cheese Souffles Muffins Promenade with ham, tomato and melted cheddar cheese Bacon and Eggs Sausage and Eggs Rum and Banana or plain pancakes Homemade Banana Bread Really, we prefer a light breakfast each morning, fruit, cereal, yogurt and toast is wonderful. Maybe an occasional egg! Not us, we want cooked, meat and eggs each morning Homemade Cinnamon Buns

Served about 830 to 9 in the morning. We do a fruit plate, cereal, and yogurt each morning with the accompanying choice. This is served buffet style in the salon
Lunch
Cold, Large Peel and Eat Shrimp with cocktail sauce, Deviled Eggs, Salad and Fresh Bread Homemade Pizza with Salad Southwestern Caesar Salad tossed with Sweet Corn & Black Beans, served with warm Tortillas Chicken or Beef Burrito's with all the fixings Cold Cuts with Cheese, Tomatoes, Lettuce, Onion, Pickles, Condiments and Fresh Bread. Served with Salad BBQ Hamburgers with Potato Salad Caesar or Plain Salad Served with Seafood Marina Topping and Pita Bread Quiches, Crab and Broccoli and Cheddar, served with a Greek Salad Egg Salad or Tuna Salad Sandwhiches on fresh buns with an accompanying salad and fresh baked cookies

Usually served buffet style in the saloon around 12:30, it is movable depending on the days activities. We generally do NOT do a dessert at lunch: There is a large basket of sweets, cookies, chocolate, and potato chips in the saloon.

Baked Nacho's with salsa and sour cream Shrimp Dip with Crackers Hummus with Pita Bread Red Pepper Dip with Crackers Assorted Cheeses Conch Fritters (Fresh if you can catch them! They move fast!) Served about 5 PM every day, along with the "tropical drink" of the day.
Dinner
Tuna Steaks topped with a Pineapple and Tomato Chutney. Served with Snow Peas, Fresh Bread and a Strawberry and Feta Spinach Salad Chicken Parmesan served with Roti Pasta tossed with Garlic, Broccoli and Carrots. Served with Green Salad and Fresh Bread Indonesian Chicken Sate, in a Peanut Sauce with Garlic Mashed Potatoes, Glazed Carrots, Salad and Fresh Flat Bread Shrimp and Scallops done Scampi Style, with extra Garlic Butter, Stir Fried Rice and Assorted Peppers, Curried Tomato Salad and buns Mahi-Mahi cooked in a parsley/dill or lemon pepper Sauce served with Stir Fried Veggies, Salad and Bread of the day Mississippi Baby Back Ribs BBQ'ed with Roasted Potatoes, Caesar Salad, and Bruschetta Stir Fried Combo of Beef or Chicken with assorted vegetables, rice or pasta and Pita Bread BBQ Beef Tenderloin with a Mushroom and Onion Gravy, Whipped Potatoes, Sweet Corn and Coleslaw Brie and Shrimp Pasta with Salad and Bread of the day Spaghetti and Meatballs with Salad and Garlic Bread, and tons of Fresh Shaved Parmesan! Chicken Alfredo, or a Zesty Italian Chicken Pasta with Salad and Bread

Always an extravaganza! Served about 7 PM. Although we cannot do individual meals, it is easy for us to put on a piece of chicken for those who do not like seafood, or vice versa!
Dinner
Comments on Dinner?

This is your space to make any special requests you may have! We may not be always able to accomodate you, as what is available effects what we serve. Many guests ask us if we can catch and cook fresh fish for dinner. Depending on WHAT we catch and WHERE we catch it, we will be happy to!
Dessert
Homemade Ice Cream! (our specialty) Apple Streusel Pie Key Lime Pie Brownies and Ice Cream Fruit and Chocolate Platter Caribbean Bananas: sliced and cooked in rum and butter, with a Kahlua Cream Topping Lemon Velvet Pie Homemade Chocolate and Fruit Fondue Cheesecake Shortbread topped with Layered Fresh Fruit and Kahlua Cream Fruit Crumble and Whipped Cream Celebration Cake! We have special Occasions!! Homemade Sorbet

Dessert we love making, so it often depends on what we want to experiment with.

Bar Preferences

We keep a well stocked self serve bar, as well as a cold drink fridge in the cockpit with beer, juices and soda. We welcome you on the yacht with ice cold painkillers and every evening we do "tropical drinks at cocktail hour! Wine is available, as are a selection of after dinner liqueurs
Sodas, Juice, Mixers, Beer
Mixers include: Bloody Mary Mix, Coco Lopez, Pineapple, Cranberry and Orange Juice, Tonic Water, Soda Water. Sodas include: 7up or Sprite, Coke and Diet Coke, Root Beer, Ginger Ale, Ting, Ginger Beer, Iced Tea, Assorted Juices Beers include: Corona, Coors Light, Budweiser, Red Stripe No beer drinkers! Love our beer! Don't run short!!

Please ask us if you have additional wants. We typically carry cans and plastic bottles where we are able to on the yacht, to minimize the risk of broken glass
Ships Wine Cellar
Chardonnay Sauvignon Blanc Pinot grigio Zinfandel Cabernet Sauvignon Merlot Pinot Noir Chianta Shiraz Blends! We drink none or very little wine

If you have specific higher end wine you enjoy, we will be happy to put it on the yacht at your cost, Ask us for our wholesalers list. We feature a different wine with each evenings meal
"guesstimate" on wine

Don't worry, the yachts rarely run out, but if you can, give us an average on how many bottles of wine your group will drink each day.
Spirits
Rum, Myers Dark, Castillo Gold, Captain Morgans, and Malibu Rum Vodka: Absoluut and Stolichnaya as well as Flavored Vanilla and Citron Absoluut Gin: Tanqueray Tequila: Jose Cuervo Gold Whiskey: Jack Daniels, Makers Mark, Jamiesons Irish Whisky, Red Label Scotch, Crown Royal Liqueurs include: Baileys, Kahlua, Amaretto, Grand Marnier, Peach Schnappes, Frangelico, Creme de Banane and Brandy Aperitifs: Tawny and Ruby Port We don't drink spirits or liqueurs!

Remember that all selections are NOT available on island, and some items may have a surcharge on them. A reasonable bar is included in your charter fee, but if you are partial to one type of liquor PLEASE let us know to stock additional.

Drinking Water

We have a chilled, purified ice water fountain in our cockpit. There is no need for bottled water, however, if you prefer it, let us know how many cases here and we will put it on at an extra cost to you. We also have an ice machine in the cockpit.
